This month, we invite you to discover a much-loved dish in Tanzania: pilau rice. Unlike simpler everyday meals, pilau is often prepared for special occasions, celebrations, and moments of togetherness.
Served at weddings, religious celebrations, or family gatherings, pilau is a dish that brings people together. Its rich blend of spices and generous flavors make it especially appreciated by both adults and children.

A dish shaped by cultural influences
Pilau rice is widely eaten across East Africa, particularly in Tanzania, Kenya, and Zanzibar. Its origins trace back to historical trade routes, when Arab and Indian traders introduced spices and cooking techniques to the region.
Cloves, cinnamon, cardamom, cumin… this blend of spices gives pilau its distinctive aroma and unforgettable taste.
Recipe of the month: Tanzanian Pilau Rice
Ingredients (serves 4)
300 g of rice
400 g of meat (beef or chicken) – optional
1 onion
2 garlic cloves
1 tomato
2 tablespoons of oil
1 teaspoon cumin
1 teaspoon cinnamon
3–4 cloves
3 cardamom pods
Salt
Preparation
Heat the oil and sauté the chopped onion until golden.
Add the garlic, spices, and meat, then cook for a few minutes.
Stir in the chopped tomato and let it simmer.
Add the rice and mix well so it absorbs the spices.
Pour in water (about twice the volume of rice), add salt, and let it cook on low heat until fully absorbed.
Serve hot, often with vegetables or a simple salad.
Pilau is traditionally cooked by first coating the rice in oil and spices before adding water, which allows it to absorb all the flavors as it cooks.
